For S-video, interconnects, digital coax, which is better? Or will I not even be able to tell?

Whether or not you are able to tell the different is very subjective. Some people says the expensive cables really make the difference some people says no matter. Basically for video output: Component outputs (Red blue and Yellow) had better picture than S-video and better than the composite output. But it really depends on how your TV performs. If you have a HDTV or good contrast TV such as SONY WEGA or JVC Flat screen, you probably can tell the different. Otherwise, it'll be the same for you.
While Audio interconnects are sometimes easy to tell. If you are using the Black and red cables compares to the $100 or more interconnects, you can tell the difference right away.
Digial or Optical cable are the same for me. I have used a $9.99 digital coaxial and upgraded to $129 one, I can't tell the difference. But I do think the Optical (Toslink) better than the digtial Coaxial cable.

I am still waiting for credible reports that anyone can do this.
If price is a factor, buy the less expensive one.
Probably no discernible differenceDalancroft
